My favorite way to eat chicken! The sauce is outstanding, with Dijon mustard, fresh squeezed lemon juice, dry sherry, cream, butter, shallots and mushrooms. This is so easy and quick to make and in one skillet!

Fillet chicken breasts into cutlets. Slice diagonally from end to end. Pat chicken dry with a paper towel, salt and pepper both sides.

In a large skillet on medium heat add 2 tablespoons of salted butter. Allow to melt then add chicken to the pan. Cook chicken until the outside is golden and set aside. Chicken will finish cooking in a later step. No need to wipe skillet.

Add 2 tablespoons of butter, mushrooms and shallots to the same skillet. Sauté for a few minutes.

Next add cream, water, bullion base, dry sherry, Dijon mustard, Worcestershire sauce, fresh squeezed lemon juice, salt and pepper to taste. Stir until combined.

Add chicken back to the skillet, reduce to a simmer and allow chicken to finish cooking and sauce to thicken. About 10 minutes.
