Rosemary, Thyme Roasted Vegetables with Bacon

Rosemary, Thyme Roasted Vegetables with Bacon

    Directions

    Step1

    Preheat oven to 350 degrees

    Step2

    In a medium bowl whisk together olive oil, Thyme, Rosemary, salt and pepper. Add peeled and chopped vegetables to the oil and herb mixture. Toss and coat thoroughly.

    Step3

    Spread mixture on a cookie sheet, baking for about 40 minutes total. Stir and turn vegetables during baking process about every 12-15 minutes. Once vegetables are fork tender and roasted to your liking, remove from oven and allow to cool for a few minutes.

    Step4

    Plate your vegetables and sprinkle with the cooked bacon and enjoy!
