Easy Homemade Corn Tortillas Easy Red Enchilada Sauce Easy Green Enchilada Sauce Homemade Adobo Seasoning Adobo Air Fryer Rotisserie ChickenThis can be made with a pre-cooked grocery store chicken or a homemade chicken. In a small bowl mix together 3/4 cup of water and 2-3 tablespoons of Adobo seasoning depending on how spicy you like your chicken, adjust to taste. Shred the warm chicken and place it in a large dish or bowl. Add the Adobo seasoning to the chicken tossing until everything is combined. Next place some enchilada sauce in the bottom of a 9x13 inch baking dish. Fill tortillas with seasoned shredded chicken.
Roll the chicken enchiladas and place them seam side down. Cover them with the desired amount of enchilada sauce.
Sprinkle the enchiladas with cheese, onions and black olives. Bake for about 12-15 minutes until cheese is melted and everything is hot all the way through.
