Delicious salmon, elegant but simple.
Ingredients
Directions
In a medium skillet add a tablespoon olive oil and saute shallot until softened. Add garlic and red pepper flakes and sauté for a minute. Add tomatoes and sauté till tomatoes soften. Add thyme and basil leaves. Add lemon juice, white wine, pepper and sugar stirring frequently. Add salt to taste about 1/4 teaspoon. Once sauce is combined and has thickened set aside.
Don’t wipe out the skillet, your going to use it to cook salmon and all those yummy bits in the bottom will add flavor.
Pat salmon dry with a paper towel. Salt and pepper both sides of salmon.
Add a tablespoon of butter to hot pan and melt. Add salmon cooking a few minutes on each side till flaky and golden brown.
Put your salmon on a plate or platter and pour the sauce over the top.
