Delicious salmon, elegant & simple.

Stem the thyme leaves and finely chop basil leaves. Set aside. You can use dried spices just use half of the amount; dried spices are stronger than fresh.

In a medium skillet on medium heat, add a tablespoon olive oil and saute shallot until softened. Add garlic and red pepper flakes and sauté for a minute.




Add diced tomatoes and sauté till tomatoes soften. Add thyme and basil leaves. Next add lemon juice, white wine, pepper and sugar stirring frequently. Add salt to taste. Simmer until sauce has slightly thickened. Keep sauce warm and set aside. No need to wipe skillet.

Pat salmon dry with a paper towel. Season both sides with salt and pepper.

Cook salmon in the same skillet used for the sauce and all those yummy bits in the bottom will add flavor. Add 2 tablespoons of butter on medium high heat, heating until melted. Add the salmon to the skillet. Cook the salmon 4-5 minutes undisturbed on each side until golden brown and internal temperature of the salmon reaches 145 degrees F.

Plate salmon with a generous spoonful of sauce over the top. Enjoy!
