Located in Eureka California in a landmark building over 100 years old, Samoa Cookhouse is one of the last surviving lumber camp cookhouses in the United States. Sit down at big, long tables and eat your fill of hearty American food the same way lumberjacks did a century ago. Surrounded by artifacts such as pots and pans, axes and chainsaws (there's even a museum off the main dining room), you'll be served a complete meal in traditional cookhouse style. There's no menu to select from (except at dinner, when there are two choices of entrees).

In a mixing bowl combine eggs, vegetable oil, salt, vanilla and food coloring. Mix with an electric hand mixer on medium speed (top metal bowl). Photo shows all of the ingredients.


Sift together flours, sugar, baking soda and baking powder. Add alternately with buttermilk, using mixer on low speed. Mix well but do not overmix.




Preheat the griddle on medium heat. To cook, pour 1/4 cup batter onto greased or non-stick griddle and cook until bubbles appear on the surface. Turn to brown other side. Remove to warm oven until all the pancakes are cooked.


Serve with butter and maple syrup. Enjoy!
