Super easy delicious chicken breasts with breadcrumbs and feta cheese with buttery roasted potatoes.

Preheat oven to 375 degrees. Scrub potatoes then place them on a large sheet of aluminum foil. Top with 3 tablespoons of butter, salt and pepper. Fold the potatoes up in the foil so that they don't leak. My husband and I like the flavor of Kerrygold butter, that is the butter used in the photo, it is a very bright yellow gold color. Bake the potatoes for 30-40 minutes checking them periodically for doneness. Start baking potatoes 10-15 minutes before the chicken goes in the oven so they will be done at the same time. Potatoes should be fork-tender when done.

Line a baking sheet with aluminum foil. Pat chicken breasts dry with a paper towel, salt and pepper both sides. Place the chicken breasts on the prepared baking sheet.


In a small saucepan on medium heat, melt 3 tablespoons of butter and add Panko Breadcrumbs. Sauté crumbs until golden brown. Don't burn. Remove from heat and place in a medium size mixing bowl. Add in feta cheese and stir until combined. Salt & pepper to taste. Feta cheese is a type of cheese that holds its shape during baking. Goat cheese can also be used.

Pour the breadcrumb cheese mixture on top of the chicken breasts and lightly press the mixture into the chicken with your hands. Bake until golden brown and the chicken's internal temperature reaches 165 degrees F. Allow the chicken to rest for 10 minutes once it's out of the oven.
