This soup is super quick and easy to make and pairs nicely with a grilled cheese or Baked Empanadas. You can add meat like pork or chicken to this recipe for a heartier meal.

In a food processor, combine canned undrained tomatoes, onion, chipotle pepper and garlic cloves, processing until very smooth.

In a soup pot add vegetable oil and vermicelli sauteing on medium heat until brown.

Next add in 6 cups of chicken broth and the tomato mixture. Bring to a boil then reduce heat, simmering until pasta is al dente about 5-7 minutes.

Ladle into bowl and serve. Enjoy!
