Winter fruit salad with persimmons, pears, apples, dried cranberries, mandarins, blackberries, pomegranate and walnuts.

Peel and slice persimmons. For the fruit salad cut the persimmon slices into quarters. Leave some whole slices for decoration if using a similar trifle dish as mine. Cut the apples and pears into chunks leaving skin on, the skins add color to the salad. Roughly chop walnuts. Add everything to a large bowl except the blackberries and gently toss. If using a trifle dish similar to mine, add in some of the salad then stand the persimmon slices on end using the salad to hold them in place.
Add the rest of the salad and sprinkle with blackberries, more pomegranate arils and nuts.
