Preheat broiler. Toast pine nuts until lightly golden brown. In a food processor add toasted pine nuts and garlic clove, processing on high until completely minced. Next add basil leaves, Parmesan cheese and lemon juice processing until finely minced. Add extra virgin olive oil and process until completely combined. Salt and pepper to taste.


Line a baking sheet with foil. Pat the barramundi dry with a paper towel. Rub about a tablespoon of the pesto on each of the fish fillets and place on the prepared baking sheet. Broil until the edges turn golden brown and fish has reached an internal temperature of 145 degrees, about 7-10 minutes.

Refrigerate leftover pesto. Serve and enjoy!
