Sun-Dried Tomato Pesto

    Step1

    In a small pan on medium heat, toast pine nuts until lightly golden brown.

    Step2

    In a food processor add 1 cup of basil leaves, 1 heaping cup of sun-dried tomatoes in oil undrained, 1 roughly chopped garlic clove, 1/3 cup of grated parmesan, salt and pepper. While the food processor is running add 1/4 cup of extra virgin olive oil. Process until smooth.

    Step3

    Serve and enjoy! Sun-dried tomato pesto can be used as a spread on sandwiches, in aioli's on chips or crackers and in many pasta dishes as a sauce.
