Sun‑dried tomato pesto is a rich, tangy Italian paste made from sun‑dried tomatoes, garlic, nuts, basil, Parmesan, and olive oil. Also called pesto rosso, it has a deep red color and a delicious flavor thanks to tomatoes that are dried or slow‑roasted to concentrate their natural sweetness. It comes together in just minutes and adds bold, vibrant flavor to everything from pasta and sandwiches to pizza, salads, and dips.
In a small dry pan over medium heat, toast 1/4 cup of pine nuts.
In a food processor, add 1 cup of basil leaves, 1 heaping cup of sun‑dried tomatoes in oil (undrained), 1 roughly chopped garlic clove, 2 tablespoons of lemon juice, 1/3 cup of grated Parmesan, the toasted pine nuts, and a pinch of salt and pepper. Process until mostly smooth, then with the food processor running, slowly stream in 1/4 cup of extra‑virgin olive oil. Continue processing until completely smooth.
