Crispy Onion Rings with a delicious coating that stays on!

Directions

Peel and slice 2 large onions into large rings approximately 1/2 inch thick.


Start heating the canola oil to 350 degrees F preferably in a cast-iron skillet or heavy bottom skillet. Line a baking sheet or two with paper towels and place baking racks on the paper towels for the onion rings to drain. Mix together dry ingredients. In a large bowl whisk together 2 cups flour, 1/4 cup corn starch, 2 teaspoons salt, 1/2 teaspoon baking powder, 1/2 teaspoon baking soda, 1/2 teaspoon smoked paprika or regular paprika and 1/2 teaspoon black pepper.


Add 2 cups of club soda to the flour mixture and stir.

Dip each onion ring in the batter allowing excess batter to drain off. Make sure entire ring is completely covered with batter on all sides and the inside of the ring also.

Once the oil is up to temperature, carefully add the onion rings to the oil. Fry the oinion rings until golden brown and crispy.

Once the onion rings are out of the oil place them on the baking racks allowing them to drain and cool.

Serve immediately with your favorite dipping sauce (Ranch is pictured).
