This recipe is for 8 taco size tortillas approximately 6 inches across.

In a large bowl, combine flour and salt. Make a little well in the flour mixture and pour in water and oil, stirring until combined.




Dough will look shaggy after being mixed. Knead dough a few times, folding and turning the dough into itself until you have one cohesive ball of dough. Cover and allow to rest for 15 minutes.


With a bench knife on a floured surface cut into 8 sections and roll into balls. Keep the balls that you aren't working on covered so they don't dry out.


Flatten one of the dough balls with your hand and roll it out with a floured rolling pin.


In a large non-stick frying pan or flat griddle, heat on medium. Cook the tortillas a minute or two on each side. Stack them together to keep them warm.
