This Mexican shrimp cocktail is a refreshing mix of tender shrimp, zesty Clamato Picante, crisp veggies, and creamy avocado, all brightened with lime and cilantro. Served chilled, it’s a vibrant, flavorful dish that brings the taste of coastal Mexico to your table.
Start by dicing the vegetables. Cut 2 tomatoes in half lengthwise, scoop out the seeds and insides, discard or compost them, then dice the remaining flesh. Dice half a white onion, 2 celery ribs, and a large jalapeño after removing the stem and seeds. Cube the avocado and chop half a cup of cilantro. Rinse and drain the shrimp, place them in a large bowl, and juice 1 large lime.
Mix together shrimp, vegetables and lime juice.
Pour 2 ½ cups of Clamato juice into the bowl with the shrimp and vegetables. Season with salt and pepper to taste, then stir gently to combine. Cover and refrigerate for about 20 minutes, allowing the flavors to meld together while the cocktail chills to perfection. Serve immediately, or if preparing ahead of time, wait to add the avocado until just before serving so it stays fresh and vibrant.
