Delicious salmon marinated in citrus juices, mint, garlic & spices.

Zest the oranges and lime into a medium bowl. Next juice the oranges and lime, adding the juice to the same bowl. Finely chop the mint leaves and place in the bowl. Add sugar, red pepper flakes, garlic powder, onion powder, chipotle powder, smoked paprika and salt. Mix everything together until combined. Add salmon to a large Ziplock bag and all of the marinade. Allow the salmon to marinate for 15 minutes.

Heat a skillet on medium high heat. Add 1 tablespoon of olive oil and the salmon. Allow to cook on each side for 5-6 minutes before turning so that the salmon has time to brown.

Once the salmon has started to brown add the rest of the marinade from the bag into the skillet and finish cooking until the salmon reaches 145 degrees internal temperature.

Serve and enjoy!
