What is Chayote squash? Chayote squash is classified as a fruit but is similar to a tomato and tastes like a cucumber. Commonly Chayote squash is used in cooking as a vegetable and can be eaten cooked or raw. It is native to the tropics of the Western Hemisphere and is available year-round, with peak season in the fall. Chayote squash is high in nutrients and low in calories. Alot of the nutrients are in the peel which is left on the Chayote squash in this recipe, which makes this super easy to make!




Preheat oven to 400 degrees. Line a baking sheet with aluminum foil. Cut the ends off of the Chayote squash, then slice in half lengthwise. Scoop out the seeds, a spoon works nicely for this. Next slice the Chayote squash into 1/2-inch slices and add to a large mixing bowl.

Peel and slice red onion into half-moon slivers and add to the bowl with the squash.

Add olive oil and a generous amount of salt and cracked pepper then toss until everything is coated.

Spread the mixture on the prepared baking sheet. Bake on the middle rack for 30-40 minutes, turning the mixture with a spatula twice during baking so that everything roasts evenly.
