Delicious easy side dish! Potatoes, peas, jalapenos, curry & ginger seasoning!

Peel potatoes and cut into chunks. Place the cubed potatoes in a pot of water and bring to a boil. Boil the potatoes until they are soft.

Wipe the saucepan dry that the potatoes boiled in. Add a tablespoon of olive oil, diced onion and diced jalapenos. Saute until softened.

Next add in the curry powder and ginger. Add the boiled and drained potatoes back to the pot, stirring until combined. Gently add thawed peas and stir. Salt and pepper to taste.

Serve and enjoy!
