Preheat the oven to 350°F. Pat the steak dry with a paper towel, trim any excess fat, and remove any silver skin. Use the flat side of a kitchen mallet to pound the steak until it’s about 1/2 inch thick.
The steak in the photo measures 5 inches wide and 12 inches long. Slice the cheese to fit the steak, overlapping the pieces for maximum cheesiness.
Place stacks of 5-6 spinach leaves, leaving only the very end of the roll uncovered. Roll the pinwheel as tightly as you can.
Secure the pinwheel by tying butcher twine around it.


Make sure to cut between the butcher's twine to prevent the pinwheel from unraveling.


Heat a cast-iron skillet over medium-high heat and add a tablespoon of olive oil. Once the skillet is hot, place the steak pinwheels in and sear them for 5-7 minutes on each side without flipping. After searing, transfer the pinwheels to the oven and cook to your desired level of doneness.
Allow steak pinwheels to rest for 5-10 minutes, remove butchers twine, serve and enjoy!
