Peel, dice and cube sweet potato. Add a tablespoon of olive oil to a hot skillet. Add sweet potato and cook for 7-8 minutes.
Next add in red bell pepper and red onion. Sauté for 5-6 minutes.
Add in all the spices and stir. Cook until vegetables are tender. A couple of minutes before the hash is done add in chickpeas and gently stir.
Bring a small saucepan of water to a boil with a tablespoon of vinegar. Vinegar will help the eggs coagulate faster and set up quicker. Poach the eggs and drain them on a paper towel lined plate to soak up the excess water.
Add a generous amount of sweet potato hash to a plate.
Place poached eggs on top of the hash. Enjoy!
