Super easy, delicious sun-dried tomato hummus.

Directions

Preheat oven to 375 degrees F. Line a baking sheet with aluminum foil. Place the Pita Breads on the sheet. Add garlic powder with parsley to a small bowl with melted butter stirring until combined. Brush one side of the pita bread with the garlic butter. Bake for 6-8 minutes until butter is absorbed. Allow the pita breads to cool and cut into desired size triangles for serving.

Separate the chickpeas from their juice. Reserve juice.


Place 1 tablespoon of roasted red peppers, 1/4 cup of reserved chickpea liquid and the rest of the hummus ingredients into a food processor. Process on high until smooth and creamy.

Pour hummus into a bowl. Add chopped roasted red pepper to the top then drizzle with extra virgin olive oil and sprinkle with parsley and smoked paprika. Serve with garlic butter pitta bread.
