This dish is bursting with flavor, making it perfect as either a side dish or a delicious bean dip!
Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Add 1 small diced yellow or white onion and sauté until softened. Then, stir in 1 minced garlic clove and sauté for another minute.


Mince two chipotle peppers (adjust the heat to your taste). Chipotle peppers in adobo sauce are smoked, dried jalapeños immersed in a flavorful, tangy blend of tomatoes, vinegar, and spices, delivering a smoky and spicy kick.


Add to the skillet 1 teaspoon of cumin, 1 teaspoon of salt (adjust to taste), minced chipotle peppers, and a 4-ounce can of drained green chiles, stirring until well combined.
Next, stir in 1 cup of vegetable broth and 2 tablespoons of lime juice.
Add in 2 cans of drained and rinsed black beans.
Cook over medium-high heat until the liquid has reduced. Use a potato masher to mash some of the beans for that classic refried beans texture. Once the beans have thickened to your desired consistency, remove them from the heat.
Garnish with cilantro, serve and enjoy!
