Kickstart your morning with this California-style croissant breakfast sandwich, stacked with smoky bacon, jalapeño-onion scrambled eggs, juicy tomato slices, creamy avocado, and melty pepper jack cheese.
Cook bacon and set aside.
Preheat the oven to broil and line a baking sheet with aluminum foil for easy cleanup. Slice the croissants in half, butter the cut sides, and place them cut side up on the baking sheet. Broil until they are golden brown and toasted.
In a medium skillet, add 1 tablespoon of butter on medium heat. Add 1 diced jalapeno and 1/3 cup of diced onion. Sauté until softened.
Whisk the eggs in a medium bowl, pour them into the pan with the jalapenos and onions, and cook until they reach your preferred doneness. Salt and pepper to taste.
Add 1 slice of pepper jack cheese to each croissant half, on both the top and bottom. Place the croissants back under the broiler just until the cheese is melted.
Assemble the sandwiches with scrambled eggs, a slice of fresh tomato, bacon, and avocado slices. Enjoy!
