This bread is a festive fall must‑make! With sweet figs, rich dates, and toasted pecans, it bakes up moist and flavorful. If you’re a Fig Newton fan, you’ll love this — it’s a million times better. Serve it as a dessert bread or enjoy it at brunch with a smear of butter or cream cheese alongside coffee or tea.
Line a 9x5‑inch loaf pan with parchment, lightly mist with non‑stick cooking spray, and set aside; then preheat the oven to 350°F. In a dry skillet over low‑medium heat, toast the pecans until they turn one to two shades darker and release a fragrant aroma, about four to seven minutes, stirring often to prevent scorching. Once toasted, chop the pecans and set them aside. Toasting deepens their flavor, bringing out a warm, nutty richness that adds both aroma and crunch to the finished bread.
Add 1 cup of water to the bowl with the chopped figs and dates, then stir in 1 teaspoon of baking soda. Mix well and let the mixture sit for 10 minutes so the figs and dates soften.
In a medium bowl, add 2 cups of all‑purpose flour, 1 teaspoon of baking powder, ½ teaspoon of cinnamon, and ½ teaspoon of salt, stirring to combine the dry ingredients evenly. Set aside.
In another large bowl, cream together ½ cup softened butter and 1 cup granulated sugar until light and fluffy.
Beat 2 eggs into the creamed butter and sugar, adding them one at a time and mixing well after each addition.
Mix in 1 teaspoon of vanilla.
Gradually mix the flour mixture into the creamed butter, sugar, and eggs, blending until just combined.
Mix in the undrained softened figs and dates, blending them gently into the batter until evenly distributed.
Fold in 1/2 cup of chopped, toasted pecans by hand, gently stirring just until they are evenly distributed throughout the batter.
Pour the batter into the prepared loaf pan and bake for 55–65 minutes, rotating the pan halfway through baking. The bread is done when a toothpick inserted into the center comes out with moist crumbs but not wet batter.
Once the bread is out of the oven, let it cool in the pan for 15 minutes. Then remove it from the pan and let it cool completely on a baking rack before slicing and serving.
