    It’s apple season, and these puff pastry apple dumplings come together quickly and easily in minutes. With tender baked apples wrapped in flaky pastry, finished with apple‑cider sauce, whipped cream, and a sprinkle of cinnamon, they’re a simple yet indulgent way to celebrate fall.

    Step1

    Preheat the oven to 375°F. Grease a 9x13‑inch baking dish (or similar size) to prevent the apples from sticking. Make the apple cider sauce. In a small saucepan, combine 1/2 cup apple cider, 1/4 cup granulated sugar, and 1 teaspoon cornstarch. Bring the mixture to a brief boil, then reduce the heat and stir constantly until thickened; remove from the heat and let cool.

    Peel the apples if desired. Cut each one in half, then use a melon baller, spoon, or paring knife to remove the center and create space for the filling.

    Cut 2 tablespoons of cold butter into 4 cubes. Place one cube in the center of each apple half, then sprinkle with brown sugar, cinnamon, and nutmeg.

    Cut one thawed puff pastry sheet into 4 equal pieces, one for each apple half. On a lightly floured surface, roll each square (if needed) to fit around the apple halves. If your apples are small, you may not need to roll the pastry.

    Place each apple half in the center of each pastry square.

    Pull the corners of the pastry up and over each apple half, sealing them together.

    Pinch the seams closed with your fingers to secure. Place the apples in the prepared baking dish. Brush the tops and sides with an egg wash made from 1 beaten egg mixed with 1 tablespoon cold water to give them a golden, glossy finish. Bake for 30-35 minutes or until pastry is golden brown and crisp.

    When the apple dumplings come out of the oven, place the baking dish on a rack and let them cool for 20–30 minutes before serving.

    Serve warm with vanilla ice cream. Spoon apple‑cider sauce over the dumplings, then finish with a swirl of whipped cream and a sprinkle of cinnamon.
