In a large skillet, add 2 tablespoons of oil on medium heat. Add chopped onion and sauté until softened, 4-5 minutes.
Add rice to the skillet, cooking until light golden brown, stirring frequently.


Add chicken broth and salsa to the skillet and bring to a boil. Reduce the heat to low, cover, and simmer for 15-20 minutes, stirring occasionally, until the liquid is absorbed and the rice is tender and cooked through.
