Delicious hearty soup! Split pea soup with carrots, celery, onion and smoked sausage. Recipe makes a bunch and freezes well.

Directions
In a large pot boil 9 cups of water and split peas. Boil the peas for 2 minutes, remove from heat, cover and allow to soak for 1 hour.
While split peas soak, chop vegetables. 2 carrots, 2 celery ribs and 1/2 of a yellow onion diced.
After the peas have soaked, add all of the ingredients to the pot except for the Hillshire farm sausage. Bring to a boil, reduce heat and simmer uncovered for 1 hour, stirring occasionally.
After 1 hour, remove ham hock and discard. Next add diced Hillshire Farm smoked sausage to the pot. Bring to a boil, reduce heat to a simmer. Simmer uncovered for 45 minutes or until sausage is heated through and broth is desired consistency.
