Sourdough Discard Crumpets

    Equipment needed: English muffin/crumpet rings

    Step1

    In a medium bowl or measuring cup add the sourdough starter, sugar, baking soda and salt, mixing until combined.

    Step2

    Heat your griddle to medium low and spray with a vegetable non-stick cooking spray or melt a pat of butter. Grease your English muffin/crumpet rings and add a 1/4 cup of batter to each crumpet ring. My crumpet rings are 4 inches by 1 inch. I usually do two at a time, if you use the same two rings make sure to wash them off between batches so that there is nothing left behind that would cause your second batch to stick.

    Step3

    Cook undisturbed for 5 minutes. You will see some bubbles as the crumpets cook.

    Step4

    Remove the rings after about 5-6 minutes.

    Step5

    Then flip and cook 2-3 minutes more.

    Step6

    Serve with your favorite toppings, butter and jam. Enjoy!
