Delicious tender beef, a blend of spices with garlic, onions, carrots, chickpeas, rice and orzo.
Ingredients
Directions
Dice vegetables, garlic and meat. Measure spices. Salt and pepper meat.
In a large skillet with sides add a tablespoon of olive oil. Heat pan adding the meat once the pan is hot. Sauté until very brown then set meat aside. Add mushrooms, onions and carrots to the pan adding olive oil if needed. Sauté for 6-7 minutes until vegetables soften. Next add in the garlic and add meat back to the pan.
Add in broth and spices. Heat to a boil then reduce heat to a simmer. Cover and simmer for an hour to an hour and a half stirring occasionally until meat is tender.
In a small saucepan add 1 tablespoon of butter. Heat on medium heat and add orzo to the pan. Sauté until golden brown. Remove from heat and add to the skillet with the meat mixture. Next add in rice, making sure it is submerged in the liquid. Allow pilaf to cook on low medium heat for 10-15 minutes until liquid is absorbed and orzo and rice is tender. Lastly add in garbanzo beans stirring until combined. Remove from heat and serve.
Garnish with freshly chopped parsley. Enjoy!
