    Halibut Veracruz is a vibrant, coastal-inspired dish that layers tender white fish with a lively mix of tomatoes, peppers, olives, and capers. The sauce is bright, savory, and aromatic — full of warm garlic, gentle heat from jalapeño, and the kind of depth that develops as everything simmers together. While halibut’s firm, buttery texture makes it an ideal match for these bold yet balanced flavors, this recipe is wonderfully flexible. Cod, sea bass, snapper, or any mild, flaky white fish will take beautifully to the Veracruz treatment.

    Step1

    Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add 1 sliced yellow onion and 1 red bell pepper cut into 1‑inch pieces, cooking for 5–7 minutes until softened.

    Next, stir in 2 diced jalapeños and 4 minced garlic cloves, cooking for about 1 minute until fragrant.

    Stir in 2 cups of diced tomatoes and cook them until they release their juices into the pan.

    Stir in 1 teaspoon of oregano, ¼ teaspoon of black pepper, and ½ teaspoon of salt.

    Next, stir in ½ cup of white wine (such as Pinot Grigio) and ½ cup of chicken broth. If you prefer not to use wine, replace it with an additional ½ cup of chicken broth. Cook the sauce until it reduces to about two‑thirds of its original volume.

    When the sauce is nearly reduced, stir in ½ cup of sliced Spanish olives and 2 tablespoons of drained capers.

    While the sauce reduces, pat the halibut fillets dry with a paper towel.

    Heat 1 tablespoon of olive oil in a separate pan over medium heat. Season both sides of the halibut with salt and pepper, then sear for 2–3 minutes per side until lightly browned.

    Gently nestle the halibut fillets into the sauce, then let them simmer on low for a few minutes, until just cooked through and infused with Veracruz flavors. Finish with a sprinkle of chopped cilantro, a squeeze of fresh lime, and a few slices of ripe avocado.
