Directions
These Chicken Caesar Salad Lettuce Boats are made with cooked rotisserie chicken, so there’s no cooking involved — just chop, shred, and assemble. The creamy Caesar dressing is packed with flavor from simple pantry ingredients like Dijon, Parmesan, lemon juice, garlic, vinegar, mayonnaise, and Worcestershire sauce. Served in crisp romaine leaves, they can be enjoyed as a handheld salad or eaten with utensils. It’s a delicious, fresh, and simple summertime dish that’s perfect for quick lunches, light dinners, or entertaining.
Make the salad dressing. In a small bowl, combine 1 cup of mayonnaise, 2 tablespoons grated Parmesan cheese, 1 tablespoon lemon juice, 1 tablespoon white vinegar, 1 teaspoon Dijon mustard, 1 teaspoon Worcestershire sauce, 2 teaspoons granulated sugar, 1 grated garlic clove, ¼ teaspoon salt, and ¼ teaspoon pepper, stirring until smooth and creamy.
Chop or shred the meat from one whole cooked rotisserie chicken, whether store‑bought or homemade. For the best texture in your salad, chill the chicken after cutting, so it firms up slightly and pairs well with crisp greens. If you’re making the salad ahead, you can refrigerate the shredded chicken in a covered container until you’re ready to toss everything together.
You can use store‑bought croutons for convenience, or make your own for extra flavor. We have a delicious Homemade Steakhouse Garlic Parmesan Croutons recipe if anyone is interested — they add a rich, buttery crunch that takes this salad to the next level.
In a large bowl, add the shredded chicken, 2 cups of croutons, and cracked black pepper to taste. Toss everything together until evenly combined, making sure the chicken is well-coated with the seasoning and the croutons are distributed throughout.
Add 1/2 cup or more of Caesar dressing, stirring until combined.
Stir in 2 tablespoons of freshly grated Parmesan cheese, tossing everything together.
Rinse and pat dry 8-10 Romaine lettuce leaves.
Fill the crisp lettuce leaves with the chicken-and-crouton mixture, then top generously with shaved Parmesan cheese. For extra flavor, you can drizzle with Caesar dressing just before serving, or serve the dressing on the side for dipping. Top with remaining croutons. With our garden overflowing with fresh tomatoes, I like to serve the Chicken Caesar Salad Lettuce Boats with sliced tomatoes. The sweet, juicy slices pair perfectly with the savory chicken, crunchy croutons, and salty Parmesan, making this a refreshing, colorful plate that feels extra seasonal.
Enjoy!
