    Celebrate apple season with these cozy Apple Crumb Cookie Bars — a buttery cookie crust layered with tender cinnamon‑spiced apples and finished with a golden crumble topping. Quick to make and perfect for fall gatherings, holidays, or really any occasion, they’re a delicious treat to share at Thanksgiving, Christmas, or whenever you’re craving something sweet.

    Step1

    Preheat the oven to 350°F and line an 8×8 baking pan with parchment paper, leaving a slight overhang for easy lifting.

    Step2

    Make the crumb topping and bottom crust. In a large mixing bowl, add 1 1/2 cups all‑purpose flour, 1/2 cup granulated sugar, 1/4 cup light brown sugar, 1/2 teaspoon baking powder, 1/4 teaspoon salt, and 1 teaspoon vanilla extract, and stir until combined.

    Add in 10 tablespoons of melted butter, stirring until a coarse, crumbly mixture forms.

    Press two‑thirds of the crumble firmly into the bottom of the prepared pan with the flat bottom of a drinking glass to form an even, compact base, reserving the other 1/3 for the topping. Bake the crust on the middle rack for 10–12 minutes, until set.

    Make the filling. In a small bowl, mix 2 tablespoons of granulated sugar, 1/2 teaspoon of ground cinnamon, and 1 teaspoon of cornstarch.

    In a large bowl, combine 2 cups of diced apples with 1 teaspoon of lemon juice and toss to coat. Add the cinnamon–sugar–cornstarch mixture and toss again until the apples are evenly coated and fully combined.

    Spread the apple mixture over the bottom crust.

    Sprinkle the remaining crumble over the apples. Bake for 30 minutes or until the crumble is golden brown.

    Once the bars are out of the oven, let them cool completely in the pan. When cool, lift them out using the parchment paper and cut into the desired shapes with a sharp knife.
