This Rockfish in a White Wine Garlic Butter Sauce is the kind of simple, elegant seafood dish that tastes far more indulgent than the effort it requires. Flaky rockfish gently cooks in a silky blend of butter, garlic, white wine, and herbs, while smoked paprika and capers add depth and a subtle savory lift. It’s quick enough for a weeknight but refined enough for a dinner you want to linger over.
Pat the fish dry with paper towels, then season both sides with salt and pepper.
Heat a large skillet over medium heat, then add 2 tablespoons of olive oil. Add the rockfish to the skillet and cook for a couple of minutes on each side, just until the fillets turn golden and flaky.
Add 2 tablespoons of butter to the skillet and let it melt, then stir in 4 minced garlic cloves and pour in 1/3 cup of white wine.
Add 1/4 teaspoon thyme, 1 teaspoon smoked paprika, and 2 tablespoons capers to the skillet. Turn the fish and baste it with the sauce until cooked through, then remove the pan from the heat. Serve the fish on a plate and spoon a generous amount of the sauce and capers over the top.
