This golden, crunchy peanut brittle is the perfect nostalgic holiday treat — sweet, salty, and irresistibly festive.
Line a baking sheet with parchment paper. In a saucepan over high heat, combine 2 cups of granulated sugar, 1/4 cup of water, and 1 cup of light corn syrup.
Heat the mixture to 285 degrees, stirring continuously.


Next, add 16 ounces of peanuts and 2 tablespoons of butter, stirring constantly until the candy thermometer reads 295 degrees.
Remove from heat and immediately stir in 1 teaspoon of vanilla extract and 2 teaspoons of baking soda. Mix quickly.
Spread the peanut mixture as thinly as possible onto the parchment paper-lined baking sheet. Let it cool completely, then break it into your desired sizes.
