    What is a Reuben sandwich? A Reuben sandwich is a North American grilled sandwich comprising corned beef, Swiss cheese, sauerkraut, and Thousand Island dressing or Russian dressing, grilled between slices of rye bread. This is a deli classic that’s equal parts savory, tangy, and melty. Today I am changing things up by adding kimchi instead of the classic sauerkraut. Both kimchi and sauerkraut are fermented cabbage however there are some differences between the two. Seasonings: Sauerkraut is a much simpler dish often topped with just sea salt and Caraway seeds. Kimchi might incorporate a variety of seasonings like Gochugaru (red chili powder), gochujang (red chili paste), garlic, and ginger are some of the most popular additions. Sauerkraut has a tangy, acidic taste, whereas kimchi tastes salty, possibly even spicy. The signature kimchi taste is sometimes called umami (translated to mean savoriness). Kimchi can vary in taste due to the exact vegetables you use to make it, while sauerkraut always tastes like fermented cabbage. Depending on the ingredients, spicy kimchi is also a lot more common than spicy sauerkraut. You can make kimchi in many different ways, whereas sauerkraut has more defined limits. Baechu-kimchi is the closest to sauerkraut in that it has a simple cabbage base without any additional veggies. Sauerkraut is always cabbage, whereas kimchi can encompass a panoply of fermented vegetables.

    Step1

    Add beef broth to a crockpot. Thoroughly rinse corned beef removing salty brine and place into the crockpot with the broth. Remove spice packet, open and sprinkle the seasoning all over the meat and broth. For the first hour cook on high, then reduce to low and cook for 6-7 hours or until meat can easily be sliced. You can cook the meat the day before if desired.

    I cooked my corned beef the day before and refrigerated it which made slicing it a dream! Slice off any large fat cap. Slice against the grain of the meat which will help make the corned beef slices very tender.

    Make or choose a loaf of Rye bread. Pumpernickel bread is a type of rye bread. The critical difference between pumpernickel and rye bread is that rye bread is a catch-all term to describe any bread made with rye flour, whereas European pumpernickel bread is a specific type of dark rye bread made with rye meal, usually without any wheat. Therefore, pumpernickel is darker and moister than light rye bread made from a combination of rye and wheat flour. I went with Pepperidge Farm and was able to order it from Amazon, I posted the link in the conclusion box in the bottom of this recipe.

    Step4

    Make thousand island dressing. In a medium bowl mix together 3/4 cup of mayonnaise, 2 tablespoons of sweet pickle relish, 1/4 cup finely chopped red onion, 2 tablespoons of catsup, 1 tablespoon of lemon juice and 1/4 teaspoon of paprika. Stir and set aside.

    Step5

    Preheat broiler. Line a baking sheet with aluminum foil. Butter one side of the slices of bread. Place the bread in the broiler and lightly toast.

    Step6

    Once bread is toasted add Swiss cheese to the NON toasted sides of the bread slices. I added cheese to the top pieces of bread only not the bottom pieces. Place the bread back into the broiler until cheese is melted.

    Step7

    Heat kimchi in the microwave. Remove desired amount of kimchi from the jar and place on a paper towel, removing some of the liquid so that it doesn't make the sandwiches soggy. Pictured are two brands of kimchi that I use. The Mellissa's brand I purchased in the refrigerated section of my grocery store and the Surasang brand I ordered from Amazon (link below) and it doesn't have to be refrigerated until after opening. Heat corned beef if you need too.

    Step8

    Assemble sandwiches. Place thousand island dressing on the bottom piece of the bread, then add meat kimchi and top piece of bread with melted cheese.

    Cut the sandwiches in half and serve. Reuben sandwiches pair nicely with Dill Pickles and potato chips. Enjoy!
