One of my favorite fall cookies! Yummy pumpkin spice with rich creamy cream cheese frosting. These are also delicious without any frosting at all!

Directions
Preheat oven to 375 degrees and line 1-2 baking sheets with parchment paper.
In a stand mixer, hand mixer or by hand, mix in a large bowl 3/4 cup vegetable shortening, 1 cup of brown sugar, 1/4 cup dark maple syrup, 1 egg and 1/4 cup pumpkin. In a medium bowl mix together 2 1/2 cups all-purpose flour, 2 teaspoons baking soda, 1/2 teaspoon salt and 1 tablespoon pumpkin spice.
Next pour flour mixture in with sugar mixture, mixing until combined.
Roll cookies into about 1-2 teaspoon full balls and place on prepared cookie sheet. Bake for 10-15 minutes depending on your oven. Remove when cookies are golden brown.
Allow cookies to completely cool before frosting.
Make cream cheese frosting: In a large mixing bowl combine cream cheese and butter with an electric mixer. Add vanilla and slowly add in confectioners' sugar mixing until smooth and creamy.
Frost cookies and enjoy!
