Preheat oven to broil. Move the oven rack 4 inches from the heating element. Line a baking sheet with aluminum foil. Trim any unwanted fat off of chicken thighs and pat dry with a paper towel. Place the chicken thighs in a large bowl. Next add in chopped red onion, thyme. salt, pepper and extra virgin olive oil. Toss with your hands until everything is well coated.
Pour the chicken and onions out onto the prepared sheet pan. Place the sheet pan in the broiler for 5-6 minutes. Add the half cup of drained, chopped roasted red peppers to the sheet pan. Put the sheet pan back into the oven broiling for about 5 more minutes until chicken thighs are brown and have some char marks and roasted red peppers and onions are starting to char. Chicken should have an internal temperature of 165 degrees.
Once everything is cooked. Place the chicken on a platter with roasted red peppers and red onions on top. Add the hummus to the platter with some smoked paprika or roasted red peppers. Serve with pita bread.
