    This Rockfish in a White Wine Garlic Butter Sauce is the kind of simple, elegant seafood dish that tastes far more indulgent than the effort it requires. Flaky rockfish gently cooks in a silky blend of butter, garlic, white wine, and herbs, while smoked paprika and capers add depth and a subtle savory lift. It’s quick enough for a weeknight but refined enough for a dinner you want to linger over.

    Pat the fish dry with paper towels, then season both sides with salt and pepper.

    Heat a large skillet over medium heat, then add 2 tablespoons of olive oil. Add the rockfish to the skillet and cook for a couple of minutes on each side, just until the fillets turn golden and flaky.
