This quick and easy radish dish is perfect whether your radishes come straight from the garden, a weekend farmers market, or the produce aisle at your local store. Roasting them with butter and herbs brings out a mellow, savory flavor that makes them a delicious favorite for spring and summer. It’s a fresh, seasonal side that comes together quickly and is simple and delicious.
Preheat your oven to 400°F while you prep them so it’s hot by the time the radishes are seasoned and ready to go in. After washing and drying the radishes, trim off the ends to get them ready for roasting.
Place the radishes in a small baking dish, with pats of butter on top. Sprinkle the thyme, dill weed, garlic powder, salt, and pepper evenly over the radishes. Cover the dish tightly with aluminum foil and bake at 400°F for 20–30 minutes, or until the radishes are tender.
Pour the cooked radishes into a serving bowl, then spoon the buttery sauce from the bottom of the baking dish over the top so they’re well coated. Finish by garnishing with fresh parsley before serving.
