This Chinese‑style barbecue chicken brings together a glossy honey‑hoisin glaze, warm five spice, and a hint of heat, creating tender grilled thighs with deep caramelization and bold, balanced flavor. It’s an easy, make‑ahead marinade that transforms simple chicken into something richly seasoned and perfect for weeknight grilling or a casual summer spread.
In a mixing bowl, whisk together 2 tablespoons granulated sugar, 1 teaspoon salt, 1 teaspoon five spice, 1/2 teaspoon red pepper flakes, 1 teaspoon sesame oil, 2 tablespoons Shaoxing rice wine, 2 tablespoons soy sauce, 2 tablespoons hoisin sauce, 2 teaspoons molasses, 2 teaspoons garlic powder, and 1/4 cup honey until fully combined.
Pat the chicken thighs dry with a paper towel. Place them in a zip‑top bag or bowl with 4–5 tablespoons of the marinade and rub it evenly over the chicken, reserving the remaining sauce for basting. Cover the chicken and the remaining sauce, refrigerate, and let it marinate for at least 2 hours or overnight for deeper flavor.


Preheat the grill or grill pan to medium‑high heat (375–400°F). Lightly oil the grates so the chicken doesn’t stick, then place the thighs on the hot grill and cook, basting with the remaining sauce, until the exterior is caramelized and the internal temperature reaches 165°F.
