    This corn and black bean salsa is everything you want in a summer bowl — bright, juicy, a little spicy, and packed with fresh flavor. It comes together in minutes and tastes even better after it chills, making it perfect for cookouts, taco nights, or scooping straight out of the fridge.

    Step1

    In a large bowl, combine 2 cups chopped tomatoes, 2/3 cup diced red onion, 2 large finely chopped jalapeños (stemmed and seeded), 1/3 cup chopped cilantro, 1 cup drained and rinsed black beans, and 2 cups whole‑kernel corn. You can use 2 cups of canned and drained corn or kernels from 2 cooked ears of corn. If you want extra flavor, we also have an Easy Grilled Corn recipe available. Then add 1/4 cup tomato juice (such as V8 or Clamato) for extra juiciness, 1 tablespoon white wine vinegar, 2 tablespoons fresh lime juice, and salt to taste. Toss everything together until well combined. Refrigerate for a couple of hours to let the flavors develop.
