Red beans and rice is a classic Cajun dish from Louisiana, made with creamy red beans simmered with bell pepper, celery, onion, garlic, and smoky andouille sausage. It’s comforting, bold, and full of rich, delicious flavor. One of the best parts is how easy it is to make. Serve it with fluffy rice and with your favorite hot sauce for a cozy, satisfying meal with true Cajun soul.
Start the rice so it’s ready in time, cooking it according to the instructions on the packaging.
Heat a tablespoon of olive oil or butter in a pot over medium-high heat. Brown the andouille sausage, then remove from the pot, leaving all the drippings behind.
Add diced celery, bell peppers, and onion to the pot with the drippings, cooking until softened, about 7 minutes.


Add 3-4 minced garlic cloves to the pot, then stir in 1 teaspoon each of smoked paprika, dried thyme leaves, and dried oregano, along with 1/2 to 1 teaspoon of Cajun seasoning and 1 bay leaf. Cook just until the spices become fragrant, about a minute or two.
Add the 2 cans of drained red kidney beans to the pot, then return the andouille sausage to the mixture, and add 2 cups of chicken broth, stirring everything together until well combined.
Bring to a simmer and simmer uncovered for 20-25 minutes. Mash some of the beans against the side of the pot to thicken the sauce and give it the classic creamy texture. Remove bay leaf. Serve with rice and sliced green onions, and garnish with freshly chopped parsley.
