    These lean, easy pork tacos get their amazing flavor from a bold blend of spices that slow‑cook right into the meat, creating tender, juicy pork with just the right amount of heat. Piled into crisped tortillas and finished with fresh toppings like salsa, creamy avocado, melty cheese, and bright cilantro, every bite hits that perfect balance of savory, spicy, and refreshing.

    Step1

    To make the seasoning rub, in a small bowl, combine 1 teaspoon garlic powder, 1/4 teaspoon red pepper flakes, 1/2 teaspoon salt, 1 teaspoon smoked paprika, 1 teaspoon Mexican oregano, 1 1/2 teaspoons chili powder, 1 tablespoon cumin, and 1/2 teaspoon black pepper. Mix the spices until they form a well‑blended pork taco seasoning rub that evenly coats the meat and enhances the flavor during slow cooking.

    For the salsa in this taco recipe, I used a Peach Mango Salsa. It complements the pork and seasonings beautifully, adding a bright citrusy sweetness that pairs perfectly with the spices in the meat. We have a delicious homemade version you can make, but you can also usually find peach‑mango salsa in the refrigerated section of the grocery store near the produce.

    Pat the pork dry with paper towels, then rub the seasoning mixture all over the pork, coating it evenly on all sides. Add 1 tablespoon of vegetable oil to the bottom of the slow cooker, then place the seasoned pork inside. Cook on LOW for 4–6 hours, until the pork is tender enough to shred easily with a fork. Pork tenderloin is a very lean cut, so it cooks much faster than a fatty pork shoulder and becomes tender in less time.

    Once the pork is fully cooked, shred it with two forks and mix it back into the juices left in the slow cooker so the meat stays moist and flavorful.

    In a large skillet, heat a small splash of oil over medium‑high heat. Add the tortillas one at a time and brown them lightly on both sides, flipping frequently until they’re warm, pliable, and just starting to crisp at the edges. To make the tacos, fill each tortilla with a generous amount of seasoned pork, then top with shredded cheese, salsa, avocado slices, and chopped cilantro.
