These little dessert cups are no-bake and super quick and easy to whip-up. You will need 6 small mason jars or ramekins, clear is best so you will be able to see the layers.


Peel, pit and dice peaches into 1 inch dice. When you are finished you should have 3 cups of diced peaches. It takes about 3 large peaches or 4 small ones.
Place the diced peaches into a medium saucepan on medium heat. Add 4 tablespoons of sugar. Stirring frequently, allow peaches to cook for approximately 15 minutes.
In a small bowl add 1/3 cup of water and 1 tablespoon of corn starch. Add the corn starch mixture to the peaches and 1 tablespoon of vanilla. Stir until mixture slightly thickens. Remove from heat. Allow to cool.
Once peach mixture is cool enough, refrigerate until chilled. This is definitely something that can be done ahead of time if desired, even the night before.


While peaches are chilling, add graham crackers to a food processor and process on high until they are crumbs. You can also put the crackers in a Ziplock bag and crush them with a rolling pin. Then add in very soft room temperature butter. Pulse until combined.
Pour the graham cracker crumbs into a medium saucepan on medium heat and lightly toast until crispy.
Spread the graham cracker crumbs on a piece of parchment paper of even a large plate and allow them to cool.
Sprinkle approximately 1 tablespoon of graham crackers crumbs into the bottom of each jar or ramekin.
Next add a layer of peaches.
Then add the final layer of graham cracker crumbs.
Top with whipped cream and enjoy!
