These little dessert cups are juicy, sweet, and completely no‑bake, with soft peaches tucked between crisp graham cracker crumbs. They come together quickly, and their tiny mason‑jar presentation makes them irresistibly cute — perfect for summer nights or easy entertaining.
Peel, pit, and dice the peaches into 1‑inch pieces until you have 3 cups.
Place the diced peaches into a medium saucepan over medium heat. Add 1/4 cup of sugar. Cook, stirring frequently, for about 15 minutes until the peaches soften and release their juices.
In a small bowl, stir together 1/3 cup water and 1 tablespoon cornstarch. Add the cornstarch mixture to the peaches along with 1 teaspoon vanilla. Stir until the mixture slightly thickens, then remove from the heat and let it cool.
Once the peach mixture has cooled, refrigerate it until fully chilled. This step can easily be done ahead of time, even the night before.


While the peaches are chilling, add the graham crackers to a food processor and process on high until they form fine crumbs. You can also place the crackers in a zip‑top bag and crush them with a rolling pin. Add the very soft room‑temperature butter and pulse until the mixture is evenly combined.
Pour the graham cracker crumbs into a medium saucepan over medium heat and lightly toast them until crisp.
Spread the graham cracker crumbs on a piece of parchment paper or a large plate and allow them to cool completely.
Sprinkle about 1 tablespoon of graham cracker crumbs into the bottom of each jar or ramekin.
Next, add a layer of peaches.
Then add the final layer of graham cracker crumbs. Top with whipped cream and serve.
