Sweet figs, savory prosciutto, and tangy blue cheese come together in this vibrant salad layered over fresh spinach. Crisp cucumbers and red onion add refreshing crunch, while candied pecans bring a touch of sweetness. Finished with a simple balsamic‑honey dressing, it’s an easy yet elegant dish that balances rich, salty, sweet, and fresh flavors — perfect for summer gatherings or a light dinner with a glass of wine.
On a large platter, spread 6 cups of fresh spinach leaves, blue cheese crumbles, 2 sliced Persian cucumbers (or 1 English), and ½ cup thinly sliced red onion.
Layer 4–5 torn slices of prosciutto and ½ cup candied pecans evenly over the spinach, cucumber, and onion base. In a mason jar, combine 3 tablespoons extra‑virgin olive oil, 1 tablespoon balsamic vinegar, 1 teaspoon Dijon mustard, 2 teaspoons honey, and salt and pepper to taste. Seal and shake well until the dressing emulsifies, then set aside.
Cut 5–6 figs into quarters and arrange them over the salad. Pour the dressing evenly across the salad, then sprinkle with extra blue cheese crumbles. Serve immediately so the spinach stays crisp and the candied pecans keep their crunch.
