Baked Mojito Lime Salmon is a bright, citrus‑marinated dish infused with fresh mint, garlic, and smoky spices. Juicy oranges and zesty limes bring a refreshing twist, while a touch of chipotle and smoked paprika adds depth. Quick to prepare and perfect for summer dinners, this easy recipe delivers bold flavor with minimal effort.
Juice 2 medium oranges and 2 limes into a medium bowl. Finely chop 3 mint leaves and add them to the bowl. Stir in ½ teaspoon granulated sugar, ½ teaspoon chili pepper flakes, ½ teaspoon garlic powder with parsley, ½ teaspoon onion powder, ½ teaspoon chipotle powder, 1 teaspoon smoked paprika, and ½ teaspoon salt. Mix until everything is well combined.
Place salmon fillets in a shallow dish. Pour the prepared citrus‑mint marinade over the salmon, making sure each fillet is coated. Cover the dish and allow the salmon to marinate for 15–30 minutes.
Preheat the oven to 350°F. Line a baking sheet with aluminum foil. Place the 4 marinated salmon fillets (6 oz each) on the prepared sheet. Bake for 12–15 minutes, or until the thickest part of the salmon flakes easily with a fork and the flesh is opaque. Transfer the salmon to a serving platter.
