This quick and easy radish dish is perfect whether your radishes come straight from the garden, a weekend farmers market, or the produce aisle at your local store. Roasting them with butter and herbs brings out a mellow, savory flavor that makes them a delicious favorite. It’s a fresh, seasonal side that comes together quickly and is simple and delicious.
Preheat your oven to 400°F while you prep the radishes so it’s hot by the time they’re seasoned and ready to roast. Trim the ends off the radishes, scrub and wash them, then dry them before roasting.
Place the radishes in a small baking dish, then add 3 pats of butter on top. Sprinkle 1 teaspoon of fresh thyme leaves (or ¼ teaspoon dried), 2 teaspoons of chopped fresh dill (or 1 teaspoon dried), 1/2 teaspoon of garlic powder, salt, and pepper evenly over the radishes. Cover the dish tightly with foil and bake at 400°F for 30-45 minutes, or until the radishes are tender.
Stir the radishes halfway through roasting. Once they’re fork‑tender, pour the cooked radishes into a serving bowl, then spoon the buttery sauce from the bottom of the baking dish over the top so they’re well coated. Finish with a garnish of fresh chopped parsley before serving.
